Candy Coated Pecans

This is such an easy recipe and oh SO addictive yummy!

(I read through the comments on the site and adjusted the recipe accordingly.)

INGREDIENTS:
1 egg white
1/2 cup packed brown sugar
1 dash vanilla extract
4 cups pecans
1 TBS honey (more or less)
cinnamon/sugar mixture

DIRECTIONS:
1. Preheat oven to 300 degrees F.  Line cookie sheet with wax paper.  Spray the wax paper with cooking spray.
2. Beat egg white until stiff (not sure what that meant.  I just beat the egg very well).  Add brown sugar and vanilla. Stir until smooth.  Mix in pecans and stir until coated.  Pour the nuts onto the prepared cookie sheet.
3.  Bake until browned, approximately 20 minutes, remove from oven and sprinkle sugar/cinnmon mixture, bake for an additional 5 minutes.
4. Cool and enjoy! 

Makes a great addition to any salad!

I shouldn't even copy this down because I KNOW how addicted I am to pecans, almonds, hazelnuts, etc. even without sugar. But of course I will, because it will make a great treat when guests are over...if I can stay away from it til then!
